Mar is the root word of marine, and means ocean or sea in a couple of the Latin languages (Spanish word for sea is mar).
Malade is another root word. What's it look like? Malady, or sickness.
So, marmalade mean sea sickness.
Mariners had found that by hypersweetening fruit and making a kind of jelly out of the mixture, they could have food for long voyages that wouldn't spoil. Better yet, it helped ease sea sickness in that it would go down easier if one was already sick, or if one became sick, it wouldn't come up quite so fast, thus allowing the sea-men to stay fed.
